What's your favorite vegan comfort food?

I haven't posted in a very long time but I was wondering what is

your favorite vegan comfort food? Tonight I made my kids whole

wheat rotini pasta with vegan butter and garlic powder. We had

steamed veggies on the side.

 

Buttered noodles just makes me think of college. What do you whip

up??

Mmmmm, buttered noodles. :-)

 

I think my favorite vegan comfort food is probably dependent on how

I'm feeling. Sometimes it's vegan french onion dip with potato

chips. Sometimes it's vegan nachos. Probably the most comforting,

though, is cream of wheat with " butter " and " honey " -- EarthBalance

margarine and agave syrup.

Noodles = comfort

 

When I'm stressed I crave thin rice noodles with vegetables and tofu.

 

The other day it was whole wheat thin spaghetti with peanut sauce.

 

Does anyone have a vegan version of the ultimate comfort food - Kraft macaroni and cheese (served with steamed broccoli)?

Hands down, my favorite comfort food is soup - veggie, split peas, cream of asparagus ... you name it. Speaking of which, I just made a great one tonight - well at least I loved it as did my kids and dh. It's a refried bean soup. It's quick, easy, and very low-fat. If you try it, I hope you enjoy it.

Ingredients:

 

1 Tbls olive oil

1 med onion - diced

1 clove garlic - minced OR 1 Tbls garlic powder (more or less to suit your taste)

3-16 oz cans fat free refried beans

2 tsps ground Cumin

2 - 3 Cups vegan milk (plain variety - not flavored). Add more or less to reach the consistency you prefer. Not Chicken broth or veg broth would probably work just fine too.

1 Cup salsa - hot or mild, your choice. I used mild since my kids were going to be eating this.

1 Cup Nutritional Yeast - more or less to suit your taste

2 Cups frozen corn kernels

 

Instructions:

 

Put onions and garlic in a Dutch oven and sauté in olive oil until onions are transparent (about 5 - 10 minutes). Add remaining ingredients, briefly stirring after each addition. After they have been added, stir until all ingredients are incorporated. Heat through and serve.

Not a recipe here, but I do think Amy's Kitchens does a pretty good job with their frozen Mac & cheese. My only complaint is it is too cheesy, so I generally splash on a little water as I nuke it to thin it down some. But, it does hit the spot when wanting that food of childhood.

Not a recipe here, but I do think Amy's Kitchens does a pretty good job with their frozen Mac & cheese. My only complaint is it is too cheesy, so I generally splash on a little water as I nuke it to thin it down some. But, it does hit the spot when wanting that food of childhood.

Not having a package in front of me, but going by my notes, I can't find what isn't vegan about the Amy's soy Mac & Cheese. Is there something lingering in the background I'm missing?

That isn't vegan, but they do make a vegan version. See second listing. From

i think i can answer this. check to see if the soy cheese in the soy mac n' cheese has casein (a milk protein) in it. i find this in a case of a lot of soy cheeses, thaty they have casein in it to give it a "melting" quality. whcih is why I make my own vegan cheeses now.

Last time I checked, Amy's uses soy cheeses but she also uses casein - a milk protein.

If you look at the Mac and Soy, you'll see the ingredient caseinate - it states right there that it's a milk derived protein.

Exactly. Amy's has a lot of good stuff that vegans can eat, but her products with cheeses aren't among them.

i think i can answer this. check to see if the soy cheese in the soy mac n' cheese has casein (a milk protein) in it. i find this in a case of a lot of soy cheeses, thaty they have casein in it to give it a "melting" quality. whcih is why I make my own vegan cheeses now.

I never quite understood that. Why make a soy cheese with milk in it? And why just not use regular cheese if you are vegetarian vs vegan?

A lot of people are allergic to milk, but can tolerate small amounts of

casein just fine.

 

Me, if I'm going to eat casein, I'd just as soon eat real cheese.

Yum, mashed potatoes any way!

 

I often make the mashed potatoes using the Yukon Gold and just cooking water to thin them as needed and then stir in grated cabbage, fine as if for coleslaw. That is a sort of an Irish dish I will not try to spell. They might cook the cabbage first, and you could do that, but I'm lazy and the smooth mash of the potatoes and slight crunch of fine shredded cabbage seems good enough for me.

That is delicious! I recently had some because my MIL is vegan and

was here visiting and didn't eat it all. Never thought I would like

it but it is better than ice cream. :)

My husband LOVES my mashed potatoes. I'm new to veganism. Before I'd

use milk products. So here's my list of stuff I use, and I'd

appreciate it if someone could tell me what would work best as a sub.

 

butter -- I know margarine, but is there a kind that isn't a transfat

nightmare? Or is there something better to use?

 

sour cream -- I have no idea here

 

milk -- soy milk sounds like a yuck in mashed potatoes. Maybe veg

stock would be best?

 

Don't ask me for my recipe. I just know how to do it based on the

smell and texture.

EarthBalance margarine -- earthbalance.net (I think). It's

wonderful. Very buttery, vegan, no trans fats.

There's vegan sour cream, but I'd skip it in mashed potatoes. For

mashed potatoes, I now use lots of EarthBalance and the water from

cooking the potatoes. Not as creamy as before, but still really good.

Tofutti Sour cream is so good. I like to blitz it with onions and garlic to put over baked potatoes. Michelle
