Tonight I made my kids whole wheat rotini pasta with vegan butter and garlic powder. We had steamed veggies on the side. Buttered noodles just makes me think of college. What do you whip up?? Sometimes it's vegan french onion dip with potato chips. Sometimes it's vegan nachos. Speaking of which, I just made a great one tonight - well at least I loved it as did my kids and dh. It's a refried bean soup. It's quick, easy, and very low-fat. If you try it, I hope you enjoy it. God's Peace, Gayle Ingredients: 1 Tbls olive oil 1 med onion - diced 1 clove garlic - minced OR 1 Tbls garlic powder (more or less to suit your taste) 3-16 oz cans fat free refried beans 2 tsps ground Cumin 2 - 3 Cups vegan milk (plain variety - not flavored). Add more or less to reach the consistency you prefer. Not Chicken broth or veg broth would probably work just fine too. 1 Cup salsa - hot or mild, your choice. I used mild since my kids were going to be eating this. 1 Cup Nutritional Yeast - more or less to suit your taste 2 Cups frozen corn kernels Instructions: Put onions and garlic in a Dutch oven and sauté in olive oil until onions are transparent (about 5 - 10 minutes). Add remaining ingredients, briefly stirring after each addition. After they have been added, stir until all ingredients are incorporated. Heat through and serve. Not a recipe here, but I do think Amy's Kitchens does a pretty good job with their frozen Mac & cheese. My only complaint is it is too cheesy, so I generally splash on a little water as I nuke it to thin it down some. But, it does hit the spot when wanting that food of childhood. Guest guest Posted January 31, 2005 Report Share Posted January 31, 2005 i think i can answer this. check to see if the soy cheese in the soy mac n' cheese has casein (a milk protein) in it. i find this in a case of a lot of soy cheeses, thaty they have casein in it to give it a "melting" quality. whcih is why I make my own vegan cheeses now. I often make the mashed potatoes using the Yukon Gold and just cooking water to thin them as needed and then stir in grated cabbage, fine as if for coleslaw. That is a sort of an Irish dish I will not try to spell. They might cook the cabbage first, and you could do that, but I'm lazy and the smooth mash of the potatoes and slight crunch of fine shredded cabbage seems good enough for me.
