I use a little vegetable oil, or olive oil in place of butter. But Soy Milk is fine in potatoes, IMO. For sour cream, you can make it with silken tofu, and flavor it as you want. Here is how to make sour cream from Tofu: 2 cups soft or medium sour cream (I've used the silken) 1/4 cup oil 3 tbsp lemon juice or vinegar 1 tbsp Braggs or soy sauce Blend until smooth. Will keep 5 days in refrigerator.
