There's a great recipe for black beans and rice on the back of the progresso can, of course you can buy the store alternative and save and use the recipe! I also make broccoli pasta, just cook spaghetti or other pasta, cook some broccoli, fresh or frozen, stir fry some garlic in preferably olive oil, stir fry all together til heated through. Cook big batches and freeze in smaller containers. Buy larger amounts when things are sale and freeze for later use. You can also do this when things are in season with minimal processing. When sweet red peppers are in season I roast tons, peel & puree and freeze in 1 - 2 cup amounts in baggies then I have them for sauces & soups even when peppers go up to $2 each. A garden helps as well if you have space, even 1 or 2 tomato plants on a balcony take a little edge off the grocery bill. Little edges here and there add up I hope the layoffs don't come. Keep the empty jar when you use up your herb or spice and have it refilled--SO much cheaper. Best wishes to you! I think I would be looking at lentils, so cheap and you can do lots, one thing I make is a brown lentil and potato stew which is cheap and makes heaps. Here it is, you can omit the spinach Lemony Lentil Stew with Spinach and Potatoes ------------------------------ 2 cups brown or green lentils -- rinsed and picked over 4 cups vegetable broth 3 tablespoons olive oil 1 cup sliced onions 3 large garlic cloves -- chopped 1/4 teaspoon cayenne 1 package frozen spinach -- (10-ounce) or 1 pound fresh spinach 1 1/2 pounds red potatoes, 2-3 large potatoes unpeel, sliced 1/4 inch 1 teaspoon grated lemon zest 1/3 cup lemon juice 1/2 cup chopped fresh mint Salt Freshly ground black pepper Cook onions, add garlic and cayenne, cook 1 min. Add lentils and stock, cook for about 15 mins, add the potatoes. Cook covered low until all tender. Add spinach, lemon zest, lemon juice and mint. Salt and pepper to taste. (I used 3 potatoes, 1 cup lentils, 4 cups stock and 1/6 cup lemon juice for one meal. The recipe as above is heaps for 2 nights for us with 2 large eaters!) I just use vegan stock cubes. If you dont use the spinach then you do not have to use the lemon if you dont have any on hand.
