Easy Mexican casserole

Here is a yummy, easy Mexican casserole...

 

12 corn tortillas (5-6 " size), cut into bite-sized pieces

2 cans (15 oz. each) chili beans (vegetarian of course)

1 can (10-12 oz., whatever you can find) red enchilada sauce

8 oz. seitan, diced

8 oz. shredded vegan cheese

3 green onions, sliced

 

Spray a 9x13 pan with non-stick cooking spray. Spread half of the

tortilla pieces in the pan. Pour one can of beans on top, then all

of the seitan. Add the remaining tortilla pieces and the second can

of beans, then pour on enchilada sauce and top with cheese and

onions. (I think chopped olives would also be a nice addition but

haven't tried it yet.) Bake in a preheated 350 degree oven for about

20 minutes.

 

Fast and easy!

I would think you could forgo the seitan and use cooked brown rice with equally good results.

 

Maybe it is a sight thing, because I am blind, but when I eat something that would have been made with ground meat using cooked brown rice instead, I get the same texture sensation. Perhaps the visuals are different.

It's wheat gluten. You can buy it ready-made (White Wave has some;

the Chinese section of some groceries call it " mock chicken " ), or you

can make it yourself, either from vital wheat gluten (easy,

moderately cheap) or wheat flour (time-consuming, but way cheap).
