Guest guest Posted February 19, 2005 Report Share Posted February 19, 2005 Here's a pasta sauce I made up this week: Two small eggplants, cubed about 6 oz sliced mushrooms 1 onion, chopped 2 cloves garlic, minced 28 oz. can crushed tomatoes italian herbs Put everything in a pot and cook for an hour. You can also add a can of cooked beans such as white kidney beans. Here's one of my favorite pasta sauces, adapted from the one in Vegan Planet, which is a cookbook I really like: RED LENTIL PASTA SAUCE 3 T. olive oil 1 garlic clove minced 3/4 c. dried red lentils 2 carrots, thinly sliced 1 celery rib, diced 6 oz. tomato paste salt, pepper 2 T. chopped Italian parsley Saute the garlic in the oil. Add the lentils, carrots, celery, and water to cover plus one inch. Bring to a boil, then cook on low heat for 30 minutes. Add more water if necessary to prevent burning. You can have this over Penne Pasta and, if you like, add some vegetarian sausage (spicy Italian), red and green sliced and sauteed Bell peppers and onions. I have not made this sauce myself since I live so close to the Macaroni Grille and love going there, but I understand you can't tell the difference.
