I live in So.Cal.and have 2 daughters,one son (ages from 4 to 22) and one grand-baby.My mom is doing a great job of fighting cancer and we feel eating clean organic non-animal food helps a lot.She is not totally vegan,but eats goat yogurt and cheese.My daughter,Sierra who is 17 has chosen to continue eating vegan only.My other kids are vegetarian but not vegan.I believe in teaching by example and letting them decide. I wanted to share this meal that I have made many times for non- vegetarians and they always love it.I use a pre-packaged (natural) taco seasoning as it tastes what they're usually used to. Tempeh Tacos: 1 package taco seasoning mix,'Bearitos' or Hain brands 1 package tempeh (any style) 1 cup frozen,thawed corn corn tortillas warmed or fried to taste All your favorite taco add-ons (avocado,lettuce,tomatoe,salsa,etc.) Make according to package directions,using tempeh instead of meat or tofu.You'll need a little oil to brown the tempeh.I find if I crumble and brown it well people enjoy it.After adding the seasoning and water,stir in corn.
