Now that winter is ebbing (here, anyway)

I have come out of my cocoon, it seems, and I've decided to try a few

new recipes. (In winter, I tend to stick with old favorites, so that

I'm making a lot of comfort foods.) I've decided to try something

new at least once a week and post it here. Anyone else wanna do it

with me?

Fun idea! Count me in too. I've been playing with quinoa lately and

made a pilaf-type thing that's pretty good.

 

Saute some finely chopped sweet peppers (it looks prettier with

varied colors) with garlic & onion. Toast the quinoa in another

pan. Add the quinoa and some good broth to the sauteed peppers,

bring to a boil and then cook over lowish heat for 20 minutes or

until the texture is right for you. I used 1 cup of quinoa and 2

cups of broth for an entree for 2 people.

Hmm, I never toasted my quinoa before I cooked it. My children were not

crazy about the taste, I will have to toast it first. Thanks!
