Please forgive me if the formatting comes out strangely -- I cut and pasted it from my food blog. 1) Lazy dal (once again -- one cup lentils, three cups water, a glob of jarred curry paste, some salt -- I squeezed half a lemon over it at the end this time) 2) Potato Medley 1 sweet potato, diced 2-3 white potatoes, diced 1 onion, diced 1 plaintain, diced, optional 3 T oil and/or vegan margarine, and/or a combination of the two salt and white pepper to taste 1 tsp paprika 2-4 cups chopped greens (used flat mustard greens this time) Put everything but the greens in a covered, non-stick pot over medium-low heat. Stir every 5-10 minutes, until the potatoes are starting to fall apart and the sweet potatoes are done. Uncover. Add the greens. Stir until the greens are just wilted. Serve. The sweet potatoes were going to be part of the African Stew I was gonna make, but I had forgotten to cook garbanzos, and I didn't have any canned.
