honey replacement

Have you tried Agave Nectar.?? It is a good substitute for honey as well. It

is from a cactus.

Just Like Honey

 

One of my favorite sandwiches " pre-vegan " was PB and honey. I haven't had

one of those sandwiches in 33 years now. Yes, I got over missing them but

felt like I was in heaven a little while ago when I had a PB and " Just Like

Honey " sandwich. Just Like Honey Rice Nectar is made by a company called

Suzanne's Specialties. I got a jar of it from Pangea. It's made from brown

rice syrup, chicory syrup, maple syrup, and natural flavors (vegan). I have

to tell you, it's wonderful! Tastes so much like I remember honey tasting.

Granted my memory is probably a bit rusty in that department, but my mom,

who also loves PB and honey sandwiches and eats them frequently had some and

didn't know it wasn't honey. Anyway, I was just so thrilled to have

something taste so close to honey with the same viscosity that I had to pass

it on.

Brown rice syrup also comes pretty close to honey in consistency & taste.

I love Brown Rice Syrup but I don't think it taste like honey. One of my daughters would eat it straight out of the jar until it was gone if I let her! I do use it for a lot of cooking but to me, it's much less sweeter than honey. I do love it though.

i posted here some months back a faux honey recipe. If folks are

interested I can look for it again. Uses sugar and clover (the

flowers)

I was trolling vegsource.com's recipe board, hoping to find a recipe for vegan

croissants and found this little gem for homemade honey. :-)

 

Megan

 

Homemade Honey

 

3 cups water

10 cups sugar

1 tsp alum

3 cups clover blossoms (no green parts)

2 & 1/2 cups other flower blossoms (no green parts)

 

Boil water, sugar and alum for 10 minutes. Remove from heat.

Rinse blossoms in a strainer, and drain well.

Stir in blossoms.

Steep for 3 hours.

Remove flowers. Strain through cheesecloth, if necessary.

Reheat to a boil, then pour into jars, and seal.

Thanx, Nancy. Yvonne, have you made this recipe yet? Anyone else? If so, how did it turn out? I'll have to hunt down the clover blossoms, but I'm anxious to try it out.

Recipe 1

 

Make Your Own Clover Honey

 

10 cups white sugar

3 cups water

36 white clover blossoms

18 red clover blossoms

3 pink roses (the petals of)

1 teaspoon alum

 

 

1. Pick blossoms and set aside.

2. In a medium pot, bring sugar and water to a boil for 6-7 minutes.

3. Stir in alum.

4. Remove from heat and add blossoms.

5. Let stand for 20 minutes.

6. Strain through a double layer of cheesecloth and bottle.

 

Recipe 2

 

Homemade Honey

 

3 cups water
