I would like to share my own recipe for Lemon Tofu with Brocolli and Pasta. Ingred: 1 block Tofu (firm NOT silken) 1 T Canola Oil 1 sm Onion, diced 2 Lemons, zest and juice (seperatly) 2 lg Brocolli Crowns, florettes 1 Veg Bullion (Knorr is good) 1/2 c Water Pasta, cooked to prefered doneness Directions: In a large pan bring the oil and onions up to a high temp, add Tofu. Saute the tofu, adding half the zest at the begining of the cooking along with half the lemon juice. Once mostly done to perfered brownness add the water and bullion cube, stir to disolve. Add the remaining zest, juice and brocolli. Cover and let steam for 5 to 10 minutes. Serve over the pasta. My hubby and I love this meal. It is a lovely subtle but sharp lemon flavor in the tofu and a crisp broc crunch. This should make 4 servings. I think my tofu is 10oz per package.
