I just figured out exactly what I am looking for! Anyone have a

recipe for a brown rice casserole hopefully creamy with broccoli?

A couple of ways we eat brown rice (normally basmati brown rice because I like it's flavor over the "regular" brown rice) that are fast and easy is just to sprinkle some nutritional yeast, basil, and garlic on it. My kids LOVE this as do I. Another way is to toss some veggies(fresh tastes better but in time crunches I use frozen) in it like peas, corn, carrots, broccoli, etc... and then season according to what seasonings you like (I almost always use the combo of spices above because it works for us). When I cook the rice, I normally use veggie broth rather than water to give a little extra flavor too. I also use a bit of Braggs Liquid Amino Acids in the water.

Hope this helps.

God's Peace,

Gayle

My quick and easy treatment of rice is to make the rice and thaw a bag of vegetables -- Oriental style, stir-fry, broccoli, whatever. Serve them together and spoon over bottled stir-fry sauce or whatever. I've tried combining everything, but it seems the sauce is absorbed by the rice and you end up using more of it.

I do the same with pasta, frozen veggies, and sauce.

There are probably lots of other ways. couscous and veggies, etc.

For an easy dish, I cook rice with chopped up veggies. Recently I made

it with curry powder, broccoli, summer squash and onions. I often make

it with Italian herbs, garlic, onion, canned diced tomatoes, mushrooms,

and sometimes red peppers.
