Guest guest Posted May 14, 2005 Report Share Posted May 14, 2005 It's open-house night. I've made red-and-black-bean chili in the pressure cooker, and I made a lovely wheat salad (recipe at the end). Brewed some fresh iced tea, made simple syrup for it, and have lemon and mint for those who want it. Also, I'm going to make at least three kinds of popcorn: kettle corn, curry flavored, and plain. May also make garlic -- that went over well last time. My house sure smells good right now. Wheat Salad (pressure-cooker) 1 cup wheat berries 3 cups water 1/2 cup fresh lemon juice 1 cup good olive oil 1 bunch parsley, minced 6 scallions, chopped a handful of mint leaves, minced salt and pepper to taste Place wheat and water in pressure-cooker. Bring up to high pressure. Lower heat and cook at high pressure for 35-45 minutes (I did 35 and it was fine). Quick-release, rinse under cold water, and drain. Combine well with remaining ingredients and chill for at least two hours. Stir before serving. serene -- " A conservative is someone who worships the views of dead liberals.
