Freezing tofu?

I heard that freezing tofu makes it have a chewier

texture -- to do this with water-packed tofu, do you

remove it from the water first? Or leave the tofu in

the package w/ the water and pop it in the freezer?

Hi Kiersten.

Freezing tofu does give it a chewier texture. It also stands up to "rougher" cooking after it's been frozen and then thawed. Sometimes when I don't have much time or have planned ahead, I just stick the tofu, container and all in the freezer and let it freeze. The problem with this is that if I want to use the frozen tofu at the last minute, I can't. It takes too long to thaw. More often than not, though what I do is take the tofu out of the container and cut it into cubes and then put it on a cookie sheet or something where the individual pieces freeze without freezing to each other. Then when I want to use the tofu, it's much quicker to thaw plus I can take as much or as little as I want out without having to thaw the whole package. This works for me.

God's Peace,

Gayle

yes, press the water out first. i always cut mine

before freezing also, either in thin rectangular

pieces or cubes. when you defrost a uncut block of

tofu it's harder to cut into because oftentimes the

inside will remain frozen longer. yes it does make it

chewier, i can't eat tofu that hasn't been frozen!

you can freeze it in freezer bags or tupperware.

hey there,

i pop the whole thing in the freezer, then pull out a day or two

before i need it, it takes along time to dethaw. it has a wonderful

texture after this.

Kiersten,

I freeze mine in the container. Like the other people

said, it takes quite a while to thaw and don't forget

to squeeze it to get rid of excess water. It will

turn a little yellow and has an interesting texture.

If a brick of tofu is about to expire I throw it in

the freezer to use later.

Sometimes I tear it into chunks, add barbecue sauce,

heat and make sandwiches with frozen tofu. So easy!

Hope you enjoy frozen tofu!

I've not dealt with this since I can't do tofu any way, but I thought you were only supposed to freeze the firm style to achieve this result.
