It also stands up to "rougher" cooking after it's been frozen and then thawed. Sometimes when I don't have much time or have planned ahead, I just stick the tofu, container and all in the freezer and let it freeze. The problem with this is that if I want to use the frozen tofu at the last minute, I can't. It takes too long to thaw. More often than not, though what I do is take the tofu out of the container and cut it into cubes and then put it on a cookie sheet or something where the individual pieces freeze without freezing to each other. Then when I want to use the tofu, it's much quicker to thaw plus I can take as much or as little as I want out without having to thaw the whole package. This works for me. Like the other people said, it takes quite a while to thaw and don't forget to squeeze it to get rid of excess water. It will turn a little yellow and has an interesting texture. If a brick of tofu is about to expire I throw it in the freezer to use later. Sometimes I tear it into chunks, add barbecue sauce, heat and make sandwiches with frozen tofu. So easy!
