Guest guest Posted May 22, 2005 Report Share Posted May 22, 2005 hi everyone, let me start by saying i'm not vegan, but i have visitors coming who are, and i don't have any idea what to cook for them! they'll only be here for a couple of days, so if anyone could suggest a few easy recipes, i'd appreciate it so much. i'm not what i consider a vegetarian, even though i don't eat meat, but i do make lots of pasta and veggie meals. however, i'm not sure where vegans draw the line where things like milk and butter are concerned. so please, be as explicit with your recipes as you can be. and again, thanks so much! g. Guest guest Posted May 23, 2005 Report Share Posted May 23, 2005 Hi Glenda! This is a recipe that I always bring to pot lucks and it is always a big hit. And I don't even like peanut butter, but this is delicious! Peanut Butter Sesame Noodles 1 lb. vermicelli noodles (thin spaghetti) 1 cup natural peanut butter* 1 1/2 cups hot water 4-5 Tbsp. apple cider vinegar 1 tsp. salt 1 tsp. fresh garlic, minced 2 Tbsp. sugar or honey 1 Tbsp. soy sauce 3-4 Tbsp. chinese dark sesame oil crushed red pepper flakes, to taste 2 Tbsp. lightly toasted sesame seeds 4 scallions, minced 1 cup roasted peanuts, minced (optional) Cook noodles according to package. While cooking, prepare the sauce. Lightly toast the sesame seeds in small pan over medium-low heat for a couple of minutes. Put peanut butter in medium bowl and mash with a spoon to soften. Add half of the hot water, mash gently (don't splash!). Add remaining water and be patient while mixing! Add vinegar, salt, garlic, sugar/honey, soy sauce, sesame oil and pepper flakes. Stir. Place noodles in large bowl and pour sauce over noodles. Mix with a fork until coated. Let stand for a few minutes to let sauce thicken a little. Serve topped with scallions, sesame seeds and (nuts). *Please be certain to get the natural peanut butter, available in all grocery stores, Smuckers makes a good one. You dont want to get a cheap processed one like Skippy or Jif!! If you are just opening a new jar, you will need to stir it completely to mix the oil in. I also have a really great sundried tomato/basil pizza sauce if you are interested. Good luck and enjoy your visit! Guest guest Posted May 23, 2005 Report Share Posted May 23, 2005 Vegans don't eat any animal products--so no meat, dairy, eggs, etc. I would recommend going to your public library and checking out a vegan cookbook, they should have several. You can also go to google and type in " vegan recipes. " One of my favorite websites is www.veganchef.com Also, let them know your concern and figure out a plan together. This is what I do when I am staying with or going on a trip with a non-vegan. It might be best to wait until they get there and do your shopping together.
