For pesto, I use a simpler recipe, which I find delicious:

 

basil

walnuts

garlic

olive oil

salt

nutritional yeast

 

I mix them all in a food processor. I buy the walnuts already in small

pieces (they're cheaper than pine nuts). I can't give measurements

since I don't measure. Of course you can substitute other herbs for

basil, and other nuts for the walnuts.

I'm a minimalist myself - only the basics:

 

- basil

- garlic

- olive oil

 

I have a friend who claims that if you put a tomatillo or two in the food

processor while you are mixing the above ingredients, you get a creamy

consistency. I myself find it culinary sacrilege, but if you are

adventurous you may want to try it out.
