Guest guest Posted June 19, 2005 Report Share Posted June 19, 2005 I came up with this chili recipe yesterday when I couldn't find an old black bean recipe I used to make all the time. I used a bunch of old ingredients I had on hand for it, including a large can of yellow roma tomatoes. That's where the chili dish derives its name from. But it also has a bit of a kick with the chipotle pepper spice I used. SUNSHINE CHILI 1 medium onion, chopped 1 zucchini, chopped 6 cloves garlic, minced 2 c. sliced button mushrooms 1 bell pepper (use red for color contrast) 1-28 oz. can diced yellow roma tomatoes (or other yellow tomatoes), undrained 1-15 oz. can corn, drained 1-15 oz. can black beans, drained 1-15 oz. can garbanzo beans, drained 1 T. chipotle pepper seasoning salt to taste 1. Saute onion, garlic, and bell pepper until onions are transluscent. 2. Add mushrooms & zucchini. Saute until soft. 3. Add corn, black beans, garbanzo beans, tomatoes, & chili spice to sauteed vegetables. Simmer on medium-high heat 10 minutes or until heated through. This dish freezes well.
