Help -Vegan Browinies

Hi Everyone,

Has anyone ever sucessfully used box brownies w. egg replacer or

another egg substitute. When I have tried they become a goopy mess-

very greasy. I think I recall reading that you have to decrease the

oil -anyone have any helpful hints- thanks - cathy

I have successfully made boxed cake mixes using the egg replacer. I also substitute apple sauce for oil. I think they are better, but that's just my taste, perhaps.

I haven't had good luck making brownies with egg

replacer, but maybe there are mixes where it would

work better (maybe at health food stores?). My

browinies didn't rise and, like you said, became a

goopy mess. They still tasted good, though!

I don't do anything different with the box brownies when I use them except use egg replacer. They have always turned out fine. Maybe you need to "whip" the egg replacer a bit. I find that when I use egg replacer in baked goods, if I beat it and use a rounded measurement rather than a flat one the food comes out much better.

I never use egg replacer...I always use banana

instead. 1/2 banana = 1 egg. I have an awesome vegan

brownie recipe if you ever want to make them from

scratch.

I never use egg replacer...I always use bananainstead. 1/2 banana = 1 egg. I have an awesome veganbrownie recipe if you ever want to make them fromscratch.

thanks for the suggestion - last time I tried i used arrowroot - maybe

i need to use the real egg replacer - i will try it and get back to you

Okay these are my all-time favortite brownies, from

the book Vive Le Vegan!

 

Fudgy Brownies

 

3/4 cup flour + 1/3 cup flour

1/3 cup cocoa

1 teaspoon baking powder

I have had the same problem with egg replacer. I did try apple sauce, and that worked okay. They were a little too moist for me though. Perhaps a banana would work instead.

A recipe I have for peanut butter cookies has banana and applesauce. I love them! Actually I like eating the dough even more than the baked cookies and it's totally safe because they don't have eggs! :)

Now that sounds yummy. Could you post the recipe or let us know where it comes from? Peanut butter cookies are my favorite.

A recipe I have for peanut butter cookies has banana and applesauce. I love them! Actually I like eating the dough even more than the baked cookies and it's totally safe because they don't have eggs! :)

I have not tried any box recipies as most contain unhealthy

partially-hydrogenated oils. I do have a recipe which uses tofu,

that I copied from somewhere, but have not yet tried. Here it is:

 

Fudgy Brownies

Makes 24—Dairy-free

 

Tofu replaces eggs and butter without sacrificing the delicious rich

flavor or fudgy texture.

 

8 oz. silken tofu, drained

1 1/2 cups plus 6 Tbs. unbleached white flour

2/3 cup water

1 1/2 cups sugar

1 tsp. salt

1 tsp. vanilla extract

3/4 cup unsweetened cocoa

1/2 cup vegetable oil

1 tsp. baking powder

Preheat oven to 350°F. Grease and flour a 9-inch square baking pan.

 

In food processor or blender, process tofu until puréed. In small

saucepan, mix 1/3 cup flour with water until smooth. Stir in puréed

tofu until blended. Cook over low heat, stirring occasionally, until

heated through, about 3 minutes. Transfer to medium bowl and let

cool completely.

 

Add sugar, salt and vanilla and mix until well blended. In small

bowl, mix cocoa and oil, then stir into tofu mixture. Stir in

remaining 1 1/2 cups flour and baking powder until blended. Scrape

mixture into prepared pan. Bake until top is dry and springs back

lightly when gently pressed, about 25 minutes. Set pan on wire rack

and let cool, then cut into bars.

 

Marie Oser's book " The Soy of Cooking " has a rather fudgy recipe for

brownies which uses tofu and a prune-puree mixture. I do believe it

was vegan and I have unfortunately misplaced my copy. It did make a

huge pan of brownies and was pretty good, if you can find a copy of

the book. I got a copy at the library.
