When I have tried they become a goopy mess- very greasy. Guest guest Posted June 22, 2005 Report Share Posted June 22, 2005 I haven't had good luck making brownies with egg replacer, but maybe there are mixes where it would work better (maybe at health food stores?). My browinies didn't rise and, like you said, became a goopy mess. They still tasted good, though! Guest guest Posted June 22, 2005 Report Share Posted June 22, 2005 I don't do anything different with the box brownies when I use them except use egg replacer. They have always turned out fine. Maybe you need to "whip" the egg replacer a bit. I find that when I use egg replacer in baked goods, if I beat it and use a rounded measurement rather than a flat one the food comes out much better. They were a little too moist for me though. Perhaps a banana would work instead. Actually I like eating the dough even more than the baked cookies and it's totally safe because they don't have eggs! Here it is: Fudgy Brownies Makes 24—Dairy-free Tofu replaces eggs and butter without sacrificing the delicious rich flavor or fudgy texture. 8 oz. silken tofu, drained 1 1/2 cups plus 6 Tbs. unbleached white flour 2/3 cup water 1 1/2 cups sugar 1 tsp. salt 1 tsp. vanilla extract 3/4 cup unsweetened cocoa 1/2 cup vegetable oil 1 tsp. baking powder Preheat oven to 350°F. Grease and flour a 9-inch square baking pan. In food processor or blender, process tofu until puréed. In small saucepan, mix 1/3 cup flour with water until smooth. Stir in puréed tofu until blended. Cook over low heat, stirring occasionally, until heated through, about 3 minutes. Transfer to medium bowl and let cool completely. Add sugar, salt and vanilla and mix until well blended. In small bowl, mix cocoa and oil, then stir into tofu mixture. Stir in remaining 1 1/2 cups flour and baking powder until blended. Scrape mixture into prepared pan. Bake until top is dry and springs back lightly when gently pressed, about 25 minutes. Set pan on wire rack and let cool, then cut into bars. Marie Oser's book " The Soy of Cooking " has a rather fudgy recipe for brownies which uses tofu and a prune-puree mixture. I do believe it was vegan and I have unfortunately misplaced my copy.
