vegan brownies

I got this one off of http://www.ivu.org

 

While I was at the university of colorado last year and the year before I got

the dining hall to make them for me and all the other vegans that were looking

for a little dessert here and there. They are so good. I've made them at home as

well and they are yummy.

From _The Vegetarian No-Cholesterol Family-Style Cookbook_

by Kate Schumann and Virginia Messina, M.P.H., R.D.:

 

(Note: These are very gooey, which is a good thing in my book.

However, if you want your brownies a little more solid you'll need to cook them

longer than the recommended time.)

 

2 cups unbleached flour

2 cups sugar

1/2 cup cocoa

1 teaspoon baking powder

1/2 teaspoon salt

1 cup water

1 cup vegetable oil

1 teaspoon vanilla extract

1/4 cup chopped pecans or walnuts

Preheat the oven to 350 degrees.

Mix the flour, sugar, cocoa, baking powder, and salt in a large bowl.

Mix together the remaining ingredients and add them to the flour mixture.

Stir until well blended.

Pour into a 9 x 13-inch pan and bake for 25 to 30 minutes.

Let cool for 10 minutes before cutting into squares.
