Your boyfriend is lucky you are so willing to find new recipes to share together. My husband eats meat but I only cook veg so when he wants some, he cooks it himself on the side. That Costa Rican recipe looks great (ty for posting). Here's one of my faves, very flexible: Glop in a serving-size bowl layer: warm rice or couscous cold chickpeas or lentils (drained) or your fave bean wilted greens topping options: salsa indian pickle preserved lemons nuts or seeds hummus Any layer can be spiced however you want.
