Guest guest Posted July 7, 2005 Report Share Posted July 7, 2005 I made this to entertain non vegetarian friends (some flexitarian/some not) this past weekend and it was a big hit! PESTO PIZZA 1 square/rectangular of good quality crusty flat loaf bread (I use pain rustique), sliced in half to make two thinner pieces 1 recipe pesto sauce (see below) 2 tomatoes, sliced 3 portabella mushrooms, sliced I've seen some good pesto recipes posted here in the past, here is a good one too: 2 1/2 cups firmly packed fresh basil leaves 2-4 large garlic cloves, chopped/pressed 1/2 cup pine nuts 1/2 cup olive oil 1/2 teaspoon salt (recipe calls for 1/2 cup Parmesan which I omitted) Blend together all ingredients until smooth. Heat oven to 350 degrees. Spread pesto evenly on cut side of bread. Top with sliced tomatoes and portabella mushrooms. Sprinkle with ground pepper. Place pizzas directly on oven rack, bake at 350 until bread becomes lightly browned around the edges. Then broil on low until the top is cooked a bit but be careful not to burn bread.
