The recipe for Blueberry Corn Muffins that I have calls for 1 cup apple juice concentrate. Here are the other ingredients: flour cornmeal baking powder salt cinnamon oil silken tofu maple syrup applesauce vanilla extract blueberries Any ideas on how to replace that much apple juice concentrate? I'm probably too late, but maybe not... Replacing the apple juice concentrate with maple syrup would probably work well, although it would be expensive. Another liquid sweetener would work. As far as I know, apple juice concentrate would be vegan :-) I read Julie's email to say that she just didn't have any in the house and didn't have time to go to the store.
