Frugal and veg?? HELP

Hi! My name is Amy. I am glad to find this group!:) And I already

have a uestion..Hope thats ok..

I would like your ideas on a VERY frugal(cheap) ideas for healthy

vegetarian meals. I am not currently eating veg but want to start

back. The prob is that I am on an unbelievably strict grocery budget

and it is hard to eat healthy much less veg. I am sure it is posible

I just need ideas. Thanks so very much.

Hi Amy,

 

I can eat cheaper than I ever did by buying various

grains and beans and cooking from scratch (soaking the

beans, etc). Obviously, the more veggies, the more

expensive it will be. But overall it's always cheaper

than my diet before.

Hi Amy,

 

Buy frozen veggies.

 

Take a look around at sales flyers at local supermarkets. Most stores

will have frozen veggies on sale every week. I know they arent as

great as fresh but the nutrition is still there and they are cheaper.

Many markets also have sales on canned goods so you can buy beans that

way for fast and easy cooking. Just buy a variety of frozen

veggies/beans..mix it up a little with differant seasonings and you

have a differant meal all the time.

If there are Big Lots stores where you live, you might try them, as

well. I've gotten different pastas for $0.37 a pound, Twinings teas

for less than half price, diced tomatoes for $0.25.... At first I

thought the goods would be past their expiration dates, or the cans

would be dented or otherwise shoddy, but I was wrong. If Big Lots

isn't in your area, it's likely that some other store of its type is.

Bulk bins are your frugal friends. Beans are amazingly flexible: you

can do hummus-type spreads with any type of bean and any spices you

like. Spread that inside a nice big lettuce leaf (instead of a

tortilla or pita), with tomato or other vegetables you like & it's a

tasty wrap. Cooking from scratch is almost always cheaper than buying

convenience foods, plus it's healthier, usually less salt and fewer

sugars. Soups are cheap food and you can cram a lot of nutrition into

a big batch of soup and it freezes well so you always have something

on hand. If you have a crock pot the soup cooks itself all day and

makes your house smell great. Hook up with a buy one, get one coupon

buddy unless you have the storage for 2 of things. Stock up at sales;

give your coupons extra power by using them when things are on sale.

Use TVP instead of buying the frozen soy or veggie crumbles that look

like cooked hamburger. Stock up on seasonal veggies. Right now where

I am, sweet red peppers are cheap and plentiful so I'll buy a bunch,

roast them, peel them, puree them and freeze them in 1 or 2 cup

baggies so I have them for soups and sauces even in winter when a red

pepper is $2 or $3 for just one! And, finally, grow your own veggies

if possible.

Hi Diane!

can you recommend a recipe or two for bean spreads? I never thought of making a hummus type spread with other beans! what a great idea! any good books that you can recommend?

Pasta is a great way to stretch your $$$. I suggest buying only whole

grain for obvious reasons but white pasta once in awhile certainly

wont hurt. Whole grain or whole wheat is a little more expensive but

you can get a few meals out of 1 box that costs under $2.00.

I sometimes make a Mexican-style bean dip. Mush up pinto beans or black

beans. Add any or all of these: chopped cilantro, chopped tomatoes,

salsa, minced garlic, frozen corn kernels, whatever else you can think

of... It can be a dip for veggies or tortilla chips, or a spread for

tortillas.

Hi Sumayyah,

 

I can't wait to try the one Rachel just posted; that looks so yummy.

My refried bean spread is similar but I usually go over the top with

hot peppers, especially if roasted, and/or salsa and smush a little

avocado on the top. If I have leftover roasted vegetables I chop

them coarsely and add them to pureed white beans and throw in extra

sage or rosemary. Fava beans taste nicely strong to me so I just

leave them almost plain, just a little lemon juice and peel and maybe

a little salt. I usually go Caribbean with black beans: cayenne,

lime and sometimes little mango chunks or a tiny touch of brown sugar

or other sweetness. Cannellini or navy beans are good pureed with

lots of garlic & basil and chopped tomatoes and black olives or

capers added after, sort of Italian style.
