Guest guest Posted August 22, 2005 Report Share Posted August 22, 2005 This is a salad I threw together for a party this weekend. 3 medium carrots, peeled and coarsely grated 3 Tablespoons capers 2 14 oz cans quartered artichoke hearts zest of one lemon, minced 1 Tablespoon pimientos 1/4 cup lemon juice 1/4 cup olive oil 1/4 cup toasted sunflower seeds 3 cloves garlic, finely minced Combine all ingredients and toss to coat.
