Here are a couple vegan cheese recipes for your eating pleasure that I found in my recipe archives. Corey... CHEESE SPREAD RECIPE 3/4 cup water 1/3 cup cashews, washed 1 cup brown rice, cooked 2 ounces pimento 2 tablespoons nutritional food yeast 2 tablespoons fresh lemon juice 1 teaspoon onion powder 1 teaspoon salt 1/4 teaspoon garlic powder 1/8 teaspoon dill weed (I like to use seed) Blend all ingredients until very smooth in a Vitamix or food processor. You can add less water if you want it thicker. I like to make a double batch. It will keep about a week in in the refrigerator I think but it usually doesn't last that long around here. CHEESE RECIPE THAT SETS UP IN A MOLD... 1 c. water, 1 c. washed raw cashews, 1/4 c. nutritional yeast, 1 tsp. salt, 1 tsp. onion pwdr, 1/2 tsp. garlic pwdr, 1/2 tsp. coriander, 1/4 c. lemon juice, 4oz. jar of pimentos, 1-1/2 T. Emes gelatin Blend all ingredients on high speed for at least one minute until smooth. Warm over low heat for about two minutes. Pour into a mold and let cool. Chill over night. This cheese is great over any kind of noodle, a potato, or a steamed vegetable plate. I've even used it to make cheezy potato soup. So, a substitute for emes will have to be used in the second recipe. Corey... Or maybe not Emes gelatin? Does anyone know of another suitable gelatin that is vegan? But, I wouldn't know how much to use off the top of my head. Corey... Would agar agar work? That's a seaweed product, isn't it?
