If, like me, you use agar powder, the conversion is: 1 tablespoon agar-agar

flakes = 1/2 teaspoon agar-agar powder

Amount Measure Ingredient -- Preparation Method

3/4 cup water

1 tablespoon agar flakes -- * see note

1/3 cup cashews

1/4 cup water

3 tablespoons pimientos -- optional

3 tablespoons lemon juice

3 tablespoons yeast -- flakes * see note

1/2 teaspoon salt

1/2 teaspoon onion powder

1/8 teaspoon garlic powder

 

Lightly boil water and agar flakes for 3 minutes. Stir occasionally. Blend

until smooth remaining ingredients. Stir all ingredients together. Chill.

This cheese can be sliced. When warmed it gives a slight melting effect. Good

for a faux grilled cheese.

 

NOTE: Ingredients with a " * " refer to either another recipe or a cooking

method which can be found elsewhere in the series. Unfamiliar ingredients can

be found in most large grocery stores or health food stores.

Colby Cheeze

Amount Measure Ingredient -- Preparation Method

1 1/2 cups water

5 tablespoons agar-agar flakes

1/2 cup pimiento pieces -- drained

1/2 cup raw cashew pieces

1/4 cup nutritional yeast flakes

3 tablespoons fresh lemon juice

2 tablespoons tahini -- (optional)

2 teaspoons onion granules

1 teaspoon salt

1/4 teaspoon garlic granules

1/8 teaspoon ground dill seed

1/8 teaspoon mustard powder

 

Place the water and agar-agar flakes in a small saucepan, and bring to a boil.

Reduce heat and simmer for 5 minutes, stirring often. Place in a blender with

the remaining ingredients, and process unitl completely smooth.

 

Pour immediately into a lightly oiled, 3-cup rectangular mold, loaf pan or other

small, rectangular container, and cool. For round slices, pack into a small,

straight-sided cylindrical container. Cover and chill for several hours to

overnight. To serve, turn out of the mold and slice. Store leftovers covered

in the refrigerator.

 

Variation: For olive cheeze, prepare colby cheeze, replacing the ground dill

seed and mustard powder with 1 tb dijon mustard. After blending, stir in 3/4 c

chopped black olives.
