COUNTRY BAKED LIMAS 2 cups dried lima beans 3 pieces vegetarian bacon (I use Lightlife Smokey Tempeh Strips) 1 medium onion, thinly sliced 1/4 cup molasses 2 Tablespoons chili sauce (I use ketchup with some chili powder mixed in) 1 1/2 Tablespoon brown sugar 2 teaspoons salt 1 teaspoon mustard 1 cup tomato juice Soak beans overnight. Simmer for 45 minutes. Drain. Heat oven to 250. Place beans, bacon, and onions in layers. Combine remaining ingredients, pour over beans.
