I used navy beans, but you could use kidney, adzuki, cranberry, black eyed pea, or even lentils. I adapted the sauce from one of my grandmother's recipes to be vegan. I don't know where she got it, but she was famous for it in the family. Here goes: I used a 2 quart crock pot and cooked these for about 4-6 hours. It only has one temp setting, but I bet you could use a " low " setting and have this come out fine. 4 cups cooked great northern beans (or whatever- this is about 2 15 oz cans) 1/4 cup canola oil 1 small onion (or shallot, or scallions) chopped, (about 1/4 -1/2 cup) 3/8 cup ketchup 3/8 cup water 3 Tablespoons lemon juice 1 Tablespoon vegan sugar (whatever you usually use- molasses or maple syrup would probably work fine, too) 1 1/2 Tablespoon Annie's naturals Worchestershire sauce 1 1/2 Tablespoon table mustard 1/8 teaspoon ancho chili powder(or whatever pepper you prefer- ancho is very mild.) combine all ingredients in crock and cook for 4-6 hours. Serve with veg and brown rice. Here is a fried rice recipe that my hubby and I like a lot. I often add some cubed baked tofu (it's in the ingredients as " optional " ) but you could leave it out. I adapted this from Vegetarian Times Edamame Fried Rice. 4 cups cooked brown rice (cold leftover rice works best) 1 lb frozen veg (we like peas and carrots) 1 lb pkg edamame- cooked/thawed according to package directions 12 oz oriental style baked tofu, diced *** optional *** 1/3 cup soy sauce 1 small onion (or shallot, or 4 scallions) chopped 2-4 cloves garlic, minced gumball size hunk of fresh ginger, chopped (or less, depending on your taste) 1 Tablespoon Canola or sesame oil 1. Heat up the oil on medium heat. 2. add garlic, onion, and frozen veg, and heat through. (about 4 minutes) 3. add tofu, rice, ginger, soy sauce, and edamame and heat through (about 5-10 minutes) and EAT, EAT, EAT. will your husband eat tomato sauces if they don't have pieces of tomato in them? Mine does not like tomatoes, but will eat tomato-based pasta sauces so long as they are not " chunky. " Also, have you tried him on Seitan (gluten)? I have made this for mine with a red wine gravy based off a coq au vin recipe I used to make back before veg, and my hubby loved it. Guest guest Posted September 22, 2005 Report Share Posted September 22, 2005 I have tried him on everything I can think of. He is a meat and potatoes man all his life. There are some vegetarian recipes he eats and likes that have cheese and eggs but I would like to get some vegan meals in there too. His like of dislikes is HUGE, likes small. Lots of nights he refuses dinner and has peanut butter sandwiches, which are good for you but this man works a 14 hour day of intensive labour, 7 days a week. He needs food. He loves meatloaf type dinners, shepherd's pie, meatballs. I make them with beans, grains, eggs and cheese with gravy over it or a ketchup type sauce. He can sniff out two grains of tvp, I swear so no chance of sneaking that in at all. I have tried soooooo many recipes and I can't hide things with spices because he doesn't like spices either. Garlic, bit of cayenne salt and pepper period. What is a woman to do?????? The other thing is, the man has no teeth, soooo, no hard crunchy food either.
