Guest guest
Here's a chocolate cake recipe that I love. It is easy and light and moist. My non-vegan relatives love it too. 3 c. white flour 1 1/2 c. sugar 6 T. cocoa 2 t. baking soda 1 t. salt 3/4 c. oil 2 T. vinegar (I use cider vinegar) 2 t. vanilla 2 c. cold water Mix the dry and wet ingredients separately, then together with a whisk. Bake at 350 degrees in a 9 " x 12 " pan. I have on my card that the recipe is from boutell.com, but I went to that site now and it doesn't seem to have to do with cooking.? Frosting: 1/4 c. vegan margarine 3 c. powdered sugar 1/3 c. cocoa 1 t. vanilla soy or rice milk to make the right consistency Mix with an electric mixer until lumps are gone. This recipe I've used since childhood (originally in a non-vegan version)--I guess it's from my mother.
