Guest guest
Here's a recipe for chocolate mousse. Again, my non-vegan relatives love this and it's easy. I think I got it from a magazine ad for tofu, but I don't know how much I adapted. Rachael Chocolate Tofu Mousse 11 oz. soft silken tofu 3 T. maple syrup 1 t. vanilla or 1 T. Kahlua 10 oz. chocolate chips Blend the first three ingredients in a food processor or blender. Melt the chocolate chips in the microwave, then add to the rest and process. Pour into dessert bowls and chill.

Pudding is one of my favorite foods. Oh, let's see, let's put a recipe in here for good measure: Vegan nachos Adapted from a recipe in Debra Wasserman's Simply Vegan. 1 1/2 cups nutritional yeast 2/3 cup flour2 cups water 1/2 cup vegan margarine 1 teaspoon granulated garlic 1 tablespoon prepared mustard 1 cup salsa, very chunky (or drain some less-chunky salsa to get just a cup of the chunks -- homemade salsa works great for this, as does just using a smaller quantity of canned jalapenos, diced) Mix the first three ingredients together. Stir or whisk frequently over medium heat until it's the thickness of a very thick pudding. Add the margarine and stir and cook for another minute or two. Remove from the heat and add the remaining ingredients. Serve over tortilla chips.
