My ex-husband was a diabetic, and fat, cholesterol, and high consumption of animal protein are all the opposite of helpful for those with diabetes. Recommended dietary guidelines for someone with diabetes include not only counting carbs, but also strict control of those intakes. You should have no problem doing these things on a vegan diet. By the way, about what percentage of the food that you eat would you say is cooked and what percentage would you say is raw?
