So something authenticly tasty would be good. I've also heard of this stuff called Vegemite or Marmite, what's it good for? Marmite is English and Vegemite is Aussie. Its an aquired taste. However, as I don't like them in my opinion they aren't good for much *grins* I've seen an eggless omelet recipe on the box for powered egg substitute. I think it was for an omelet. It's weird cause I saw both Marmite and Vegemite at a local store here. So I figured they were different, as they were different brands. I thought it was only made in the UK as well. If you can find the 'tofu scrambler' mix by Fantastic Foods, mix it with tofu and whatever veggies you like: http://www.fantasticfoods.com/scripts/display_prdct.php?product_id=61 I believe that the package also has a recipe. It tastes pretty similar to scrambled eggs to me. Enjoy! -Renee Tofu Scramble Ingredients 2 Tbsp (30mL) oil 1 box tofu, drained 1/8 tsp (0.5g) turmeric (more or less according to taste) 1/2 tsp (2g) garlic powder 1 Tbsp (15mL) low-sodium soy sauce 1 cup (200g) fresh mushrooms chopped (optional) 1 green onion, finely chopped (optional) 1 tomato, chopped (optional) 1 bell pepper, finely chopped (optional) Directions Heat oil in a skillet. Add veggies and cook until they are tender but crisp. Add tofu, breaking it up into chunks. It may get quite crumbly; this is okay. Add soy sauce, garlic powder, and turmeric. Stir around for a few minutes, until the seasonings are well distributed. Cook over medium heat until the tofu is hot. A few drops of Tabasco or other hot sauce adds a spicy touch. Fry up some peppers, garlic and onions, mush up a block of tofu (soft or firm, not silken), add a bit of tumeric (to colour it yellow not for flavour). We add lots of salt, pepper and spices. Our favourite is taco spice. We eat it in a warm tortilla with lots of salsa. You can add a slice of vegan cheese if you like. Oooh thanks for reminding me of this Corey, its an excellent breakfast or light dinner. I've actually served this to a non vegan/vegetarian friend and they now prefer it to " real " scrambled eggs. I usually fry up some potatoes to go with it or some vegan bisquits and gravey. Makes a great weekend brunch. My local health food store carries a scrambled tofu mix, sometimes I use this.
