Pumpkin Pies

I've tried many different vegan versions of pumpkin pie. The one that I

like best is an adaptation of the recipe on the Libby Pumpkin can. Here are

the adaptations I make:

 

~ substitute Florida Crystals (vegan) for sugar

~ substitute soy milk for dairy milk

~ eliminate eggs and replace with a slurry of cornstarch and water (about 1

Tbsp. per egg; be generous)

 

Mix and bake according to instructions on the can. The Libby recipe is

highly spiced, so you may wish to cut back on the spices somewhat if you

don't care for that feature (although I don't alter; we love the spices).
