The one that I like best is an adaptation of the recipe on the Libby Pumpkin can. Here are the adaptations I make: ~ substitute Florida Crystals (vegan) for sugar ~ substitute soy milk for dairy milk ~ eliminate eggs and replace with a slurry of cornstarch and water (about 1 Tbsp. per egg; be generous) Mix and bake according to instructions on the can.
