I guess my last actual hold-out would be shredded cheese, to use in recipes and also cheese slices for sandwiches and such. I've never really been a big sour cream or cottage cheese person, so those don't really affect me much at all. I know there are some good alternatives out there, do you have any you would like to suggest? The eggs don't seem to be a problem really, I've already started using the " egg substitutes " from Morningstar and I don't mind those at all, even with my baking recipes.
