This site looks quite promising with lots of recipes. I haven't looked at it properly yet but I hope it helps you a bit. I just found out at our party at home that one of the boys in their class is allergic to wheat, and I felt so bad since the cakes were made with flour. I'd like him to be able to eat the cupcakes/muffins at school. So......does anyone know a wheat-free, vegan recipe? It doesn't even need frosting, since the school has a "no-sugar" (or as little as possible) policy. They let it slide a bit for birthday parties, so it doesn't have to be sugar-free, too!! Rice flour makes tender, tasty goods which may not have the structural integrity you are used to. I intend to try adding flax seed next time to see if I get less crumbliness. I like to use brown rice flour in fruity recipes- for instance, I made an apricot cookie with it. May seem slightly grainy in texture. Oat flour is sweet flavored and has a nice, smooth texture. It also tends to produce more crumbly baked goods than wheat flour. Buckwheat flour gives an excellent consistency in vegan baked goods. I make a vegan ginger/oat cookie that is absolutely wonderful with buckwheat flour. I have never tried this flour in the famed baking soda/vinegar chocolate cake recipe, but you should definitely give this one a shot. I'd say try it at home first to see how it turns out.
