Guest guest Posted November 15, 2005 Report Share Posted November 15, 2005 I made this tofu pudding at a dinner party I had recently, found the recipe on PETA recipe website but adapted it a bit. WOW--so EASY and sinfully delicious! And all vegan. Not exactly a health food, but I didn't feel bad eating the leftovers because of the tofu base. It would also make a good pie filling. TOFU PUDDING 2 12-ounce packages silken tofu 1 cup powdered cocoa (less if you don't like a strong chocolate taste) 1 cup sugar (more to taste) 1 Tablespoon vanilla Oreos or Hydrox cookies (both are vegan) Blend first four ingredients in blender until smooth. Chop an Oreo, put in the bottom of individual custard bowls. Put pudding in bowls. Chill. Before serving, chop another Oreo and sprinkle on top of pudding. Oh my, it is so good! Might be good topped with Hip Whip, marascino cherries, mint leaves, raspberries for garnish if you want to go all out. I just bought my Tofurky Feast, hope everyone has a peaceful Thanksgiving!!!
