Vegan Zucchini Bread

 

1.5 cups of whole wheat pastry flour

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1/4 tsp baking powder

1 cup vegan sugar

1 cup finely shredded, unpeeled zucchini

1/4 cup olive oil

2 tbsp cornstarch blended with 2 tbsp water

1/2 c chopped walnuts (optional)

 

Preheat oven to 350 degrees.

 

Mix the first 6 ingredients in one large bowl.

 

In another bowl, mix the zucchini, oil, and cornstarch mix and then

add the dry ingredients to it. Blend well. Add walnuts if you are

using them.

 

Bake 55-60 mins. Cool in pan for 10 mins.

 

I personally like it warm with some Earth Balance on it, but you can

wrap it and store overnight and then eat.
