I was looking through my Betty Crocker cookbook (1969 edition), and lo and behold, the gingerbread cookie recipe is vegan!! What a nice surprise. Here it is: GINGERBREAD BOYS 1/2 cup shortening 1/2 cup sugar 1/2 cup dark molasses 1/4 cup water 2 1/2 cups all-purpose flour 3/4 teaspoon salt 1/2 teaspoon baking soda 3/4 teaspoon ginger 1/4 teaspoon nutmeg 1/8 teaspoon ground allspice raisins candied cherries or red gumdrops citron string licorice decorators' icing Cream shortening and sugar. Blend in molasses, water, flour, salt, soda, ginger, nutmeg, and allspice. Cover; chill 2 to 3 hours. Heat oven to 375. Roll dough 1/4 inch thick on lightly floured cloth-covered board. Cut with gingerbread boy cutter; place on ungreased baking sheet. Press raisins into dough for eyes, nose and buttons. Use bits of candied cherries and strips of citron and string licorice for other trims. Bake 10-12 minutes. Immediately remove from baking sheet. Cool. Trim with decorators' icing. Makes about fifteen 4-inch cookies. Note: For crisper cookies, roll dough 1/8 inch thick. Bake 8 minutes. Guest guest Posted December 4, 2005 Report Share Posted December 4, 2005 My mother-in-law makes us great gingerbread cookies all the time...she " veganized " them just for us...I haven't compared it to the other recipe posted here to see how similar they are. Enjoy, Julie ~~~~~~~~~~~ Here's the recipe: 1 cup shortening 1 cup sugar 1 cup dark molasses 1/2 cup water **Mix the above items, in order listed. Then, mix all the dry goods listed below together well and add to the wet stuff. It will be " sticky " 5 cups of flour 1/2 tablespoon salt 1 teaspoon baking soda 1/2 tablespoon ginger 1/2 teaspoon nutmeg 1/4 teaspoon of allspice Put it into a plastic ziplock bag - refrigerate and let sit overnight. (You can even leave this in the fridge for up to a week without any problem) When you are ready, just roll out the cookies ( if the dough seems too dry to work with you can knead a little water in; if it seems too " loose " just add a little flour) and bake at 350 degrees until they look brown.
