Seikaku Seaweed & Vegetable Noodles A delicately spiced vegan entree from Bonnie's kitchen, very low fat, low-to-no cholesterol Serves: 2-4 Prep Time: 15 - 20 minutes Cooking Time: 6 minutes (microwave) OR 12 minutes (stovetop) Ingredients: 4 servings spaghetti or rice noodles - cooked 1/4 cup leek (aka poirot) - chopped 1 medium sized carrot - diced 3 tbs. sushi nori (aka dried/roasted seaweed) - shredded 1 clove of garlic - pressed or minced 1/2 cup soy milk 1/4 cup soy sauce 3 tbs. oil (I recommend sunflower or sesame) 1 tsp. powdered ginger dash black pepper Optional additions: mushrooms tofu, cut into small cubes Directions: 1. Cook noodles according to package instructions,

drain, & mix with a dash of oil to keep them from sticking. 2. Mix all ingredients, except the noodles, in microwave-safe bowl/dish OR in a medium sauce pan for the stove. 3. Microwave on high 6 minutes OR cook on stove, medium-high heat for 12 minutes, keeping a close watch & stirring reguarly 4. Mix sauce with noodles, & enjoy! Notes: Sushi nori comes in dried sheets, used for wrapping sushi rolls. You can find it at most Asian food stores, and in the Asian/Orient section of most groceries. Just tear off a strip or two and rip the seaweed into small peices for this recipe. "Seikaku" means, "honored guest"
