Guest guest Posted January 8, 2006 Report Share Posted January 8, 2006 This is a good recipe from the book Tofu Cookery.TOFU LOAFMix together: 1 pound tofu, mashed1/2 cup wheat germ1/3 cup fresh parsley, chopped1/4 cup onion, chopped (or 1 Tablespoon onion powder)2 Tablespoons soy sauce2 Tablespoons nutritional yeast (optional)1/2 Tablespoon Dijon mustard1/4 teaspoon garlic powder1/4 teaspoon black pepperPreheat oven to 350. Oil a loaf pan with 2 Tablespoons oil (note-I use nonstick spray, but the edges might not get as crispy). Press the tofu mixture into the oiled loaf pan. Cover top generously with ketchup. Bake for 1 hour. Let cool about 10 minutes before removing from the pan. Garnish with ketchup and parsley. Also good sliced and fried for sandwiches the next day.
