Raspberry-Apple Cobbler A sweet and sassy treat, can be served as a desert or a breakfast. Almost fat free, no salt, no cholesterol. Easy to make. Vegan ! Serves: 4-6 Cook Time: 25 min. Prep Time: 10 - 15 min. (1 cup =

8oz.) Ingredients: 1 & 1/2 cup raspberries 1 large red apple (diced) 1 cup flour 1 cup sugar 1/2 cup margarine 1 teaspoon cinnamon 1 teaspoon vanilla Needed: Saucepan (or large microwave-safe bowl) 9-inch nonstick

baking pan Large mixing bowl Directions: Put in a saucepan: raspberries and apple with 1 Tbs. of the margarine and 2 Tbs. of the sugar simmer on low-med heat for about 5 - 7 min. (or, microwave on medium for 5 min) Put remaining ingredients into bowl and mix until crumbly and even Rub a 9inch nonstick baking pan with margarine Put fruit mixture into the pan, even out Top with crumble mixture Bake at 390° F (220° C) for 20 min, until top is golden brown Cool for a few minutes before serving Can be served hot, warm, or cold. (Garnish with fresh raspberries for an extra decorative touch)
