Guest guest Posted August 2, 2006 Report Share Posted August 2, 2006 Vegetable Lo Mein ( " New Vegetarian Cuisine " ) 1 T canola oil 1 medium onion, thinly sliced and separated 1 stalk celery 2 carrots, thinly sliced with vegetable peeler 1 large zucchini, cut into 2-inch julienne strips 2 cups chopped broccoli 1 4 oz. Can water chestnuts, drained and thinly sliced 1 c fresh snow peas or frozen peas 2 T sodium reduced soy sauce 8 oz linguini, cooked al dente and drained 1 t Oriental sesame oil 3 green onions, cut into 2 inch julienne strips Heat a wok or a nonstick skillet over high heat. Add the oil, swirling it around the pan. Add the onions and stir fry 2-3 minutes. Add the celery and carrots, stir fry 2 minutes. Add the zucchini, broccoli, water chestnuts, and pea pods and stir fry for 2 more minutes. Add soy sauce; heat 1 minute. Add the hot, well drained linguini to the vegetable mixture, sprinkle with sesame oil and green onions, and mix until thoroughly heated.
