uses for molasses

Anyone have a healthy recipe using molasses? It is very high in iron yet I

don't want to bake with it,

Hi Ellen,

 

I like this molassesy recipe for baked beans from Jennifer Raymond's

" The Peaceful Palate " a lot. (It can be made on a stovetop or in a

crockpot, as well as in an oven, and the beans come out sweet and

soul-foody.) It's super filling and one of the very few recipes I cut in

half for a two-adult household. Here's the whole " Serves 8 " recipe:

 

2-1/2 cups dried navy beans (or other small white beans)

1 onion, chopped

1 clove garlic, finely chopped

15 ounces tomato sauce

1/2-cup molasses

2 teaspoons stone ground or Dijon mustard

2 tablespoons vinegar

1-2 teaspoons salt

 

Rinse the beans and soak them in 6 cups of water for 6-8 hours. Discard

soaking water and place the beans, chopped onion and garlic in a pot

with enough water to cover the beans with an inch of water. Bring to a

simmer, then cover and cook until the beans are tender (2-3 hours).

 

Add tomato sauce, molasses, mustard, and vinegar. Cook, loosely

covered, over very low heat for 1 or 2 hours. Or, transfer to an

ovenproof dish and bake at 350 degrees F for 2-3 hours. Add salt to taste.

 

Crockpot variation: Place the cooked beans into a crockpot with all the

remaining ingredients. Cover and cook on high for 2-3 hours.

Hmm. I do like to put molasses in hot cereal, especially cornmeal.

Also, maybe you could use it in a marinade for tofu or something?
