Does anyone have a good recipe for veggie loaf? I made one tonight

after looking up two different recipes. I cooked it for 45 minutes, as

instructed. Although the seasonings were good, it was just too dry.

Thanks in advance!

This is a good one. It is from my friend Jennifer Raymond's cookbook,

The Peaceful Palate. Enjoy! :-)

_____

NEAT LOAF

1 cup cooked brown rice

2 cups bread crumbs

1 cup walnuts, finely chopped

1 small onion, finely chopped

2 celery stalks, finely chopped

1 carrot, finely chopped

14-ounce package " fake " ground meat

¼ cup barbeque sauce

3 tablespoons reduced-sodium soy sauce

2 teaspoons stone ground or Dijon mustard

½ teaspoon thyme

½ teaspoon sage

¼ teaspoon black pepper

Preheat oven to 350°. In a large bowl, combine brown rice, bread

crumbs, walnuts, onion, celery, and carrot. Add " fake " ground meat,

along with all remaining ingredients. Stir with a large spoon or

knead mixture by hand until it is well mixed and holds together.

Transfer to an oil-sprayed 5 x 9-inch loaf pan and distribute evenly.

If desired, spread top of loaf with additional barbecue sauce. Bake

60 minutes. Let stand 10 minutes before serving.
