Enjoy! :-) Tamara _____ NEAT LOAF 1 cup cooked brown rice 2 cups bread crumbs 1 cup walnuts, finely chopped 1 small onion, finely chopped 2 celery stalks, finely chopped 1 carrot, finely chopped 14-ounce package " fake " ground meat ¼ cup barbeque sauce 3 tablespoons reduced-sodium soy sauce 2 teaspoons stone ground or Dijon mustard ½ teaspoon thyme ½ teaspoon sage ¼ teaspoon black pepper Preheat oven to 350°. In a large bowl, combine brown rice, bread crumbs, walnuts, onion, celery, and carrot. Add " fake " ground meat, along with all remaining ingredients. Stir with a large spoon or knead mixture by hand until it is well mixed and holds together. Transfer to an oil-sprayed 5 x 9-inch loaf pan and distribute evenly. If desired, spread top of loaf with additional barbecue sauce. Bake 60 minutes. Let stand 10 minutes before serving. Guest guest Posted January 28, 2007 Report Share Posted January 28, 2007 Here are my two favorite loaf recipes:TOFU LOAF (from "Tofu Cookery")Preheat oven to 350 F.Mix together:1 lb. tofu, mashed1/2 cup wheat germ1/3 cup parsley, chopped1/4 cup onion, chopped or 1 Tbsp. onion powder2 Tbsp. soy sauce2 Tbsp. nutritional yeast (optional)1/2 Tbsp. Dijon mustard1/4 tsp. garlic powder1/4 tsp. black pepperOil a loaf pan with:2 Tbsp. oil. Press the tofu mixture into the oiled loaf pan and bake for about 1 hour. Let cool for about 10 minutes before removing from the pan. Garnish with ketchup and parsley. Also good sliced and fried for sandwiches the next day.LENTIL LOAF (from "Betty Crocker's Great Main Dishes without Meat")2 cups finely chopped onion2 cloves garlic, crushed2 teaspoons oil2 cups cooked lentils (3/4 cup dry lentils, cooked)2 cups finely chopped tomato (about 2 large)1 1/2 cups dry bread crumbs1/2 cup chopped fresh parsley1 teaspoon salt1 teaspoon ground cuminegg substitute equivalent to 3 eggs (I use Ener-G brand)ketchup for garnishHeat oven to 350. Grease loaf pan. Cook onion and garlic in oil until onion is crisp-tender. Mix onion mixture and remaining ingredients; spoon into loaf pan. Spread layer of ketchup over loaf.
