New to Group (again) with QUESTION

Ahimsa.

 

Hi, folks. This is Rose (again), I'm 59 and live in rural upstate New York.

 

I'm vegan. Hubby is with the exception of yogurt. We tried soy yogurt and I gotta tell ya - I would have given away gov'ment secrets if I was forced to eat that again. But I digress...

 

QUESTION: I have a chocolate chip cookie recipe - vegan, of course. It calls for CORN OIL, but I couldn't find certified organic corn oil. Instead, I do have Sunflower Oil.

 

Would the sunflower oil be a good substitute for the corn oil? I just don't know what the corn oil contributes, so substituting is always questionable.

I'm guessing the sunflower oil would be fine. If the cookies turn out

well, please do share the recipe with us!

Rose,I hear you on the yogurt tip. Some of the soy yogurts are SO bad. Have you tried different brands, though? I've found that Whole Soy Co. makes some awesome soy yogurt (I found em at Kroger), whereas Silk is just okay. Silk's yogurt reminds me of cherry pie filling because of the tartness, and I find Stonyfield Farms soy yogurt to be totally inedible.

I make my own soy yogurt - but unless you can get fresh, homemade

soymilk from an asian market -- it is impossible. My soy yogurt is

VERY good. wholesoy and silk are gross to me.

 

I have always like unsweetened yogurt (dairy) - so unsweetened soy is

not a stretch for me. I highly recommend Wildwood if you can find it.

you know, yogurt (homemade dairy - incubated for 24 hours) is the

*only* think I miss being vegan. But my soy-gurt is pretty darn good...

 

recipe for soy yogurt

 

* 1/2gal sweetened soy milk (fresh, sweetened - not commercial!! silk,

etc will not work)

* 2T kudzu root, powdered and dissolved in a small bit of the soy milk

* yogurt starter for 1/2gal 'milk' (1/2-1c plain soy yogurt works too

since yogurt starter is rarely vegan)

 

mix all. incubate 8 hours. do not touch your batch - just stick

straight into fridge. Let chill 24 hours.

 

If your soymilk was not the right quality, then it will be a nice

solid mass. If not - then you cannot use that milk next try.
