for buttermilk? i wonder if you could do something similar using rice,

soy, or almond milk? report back to us if you find anything. :)

Stephanie,

I'm guessing that adding vinegar to the rice milk or almond milk would

work, but I don't know how much to use and I've never tried it myself

:-) Maybe someone else can give a better answer...

You can feed (or grow) a yogurt, kefir or buttermilk culture on

soymilk and it will get nicely sour. If it is homemade soymilk it will

separate into tofu and whey (white and yellow) liquids, which lets you

know the culture is acidifying, and all you have to do is stir it up

again before using it.

Simply " sour " your preferrred milk sub with 1 tsp of lemon juice to 1 cup of

milk - change the proportions to suit your recipe. Let the milk stand for

about 10 minutes and it will have curdled.

you can also curdle it with vinegar if you haven't any lemon juice.

I seem to remember that about 1 teaspoon per 1 cup of soymilk makes a good substitute. Mix it together and let it sit for a few minutes; it will get kind of curdled. I don't know if it works the same for rice or other type of milks but you could certainly try!
