Stephanie, I'm guessing that adding vinegar to the rice milk or almond milk would work, but I don't know how much to use and I've never tried it myself :-) Maybe someone else can give a better answer... Guest guest Posted June 3, 2007 Report Share Posted June 3, 2007 You can feed (or grow) a yogurt, kefir or buttermilk culture on soymilk and it will get nicely sour. If it is homemade soymilk it will separate into tofu and whey (white and yellow) liquids, which lets you know the culture is acidifying, and all you have to do is stir it up again before using it. Guest guest Posted June 3, 2007 Report Share Posted June 3, 2007 I seem to remember that about 1 teaspoon per 1 cup of soymilk makes a good substitute. Mix it together and let it sit for a few minutes; it will get kind of curdled. I don't know if it works the same for rice or other type of milks but you could certainly try!
