I just read that to make a buttermilk substitute use 1 Tablespoon vinegar or lemon juice to 1 cup milk then let it stand for 5 minutes. Yes, soymilk clabbers like milk. I would use only 2 teaspoons of white vinegar or lemon juice per 1 cup of soymilk, though. And I don't know if seed or nut milks clabber or not.
