Candied Plantains 3 ripe plantains 1/3 c. brown sugar or sugar substitute of your choice 2 TB vegan margarine, melted zest of 1/4 lime juice of whole lime (a large one) zest of 1 orange 1 TB of orange juice concentrate 1/3 c. coconut flakes generous sprinkling of cinnamon Slice the plantains and layer into a glass casserole. Mix the rest of the ingredients and pour over the layers of plantains, except for the last two. Sprinkle the coconut flakes and the cinnamon over the top and bake for 30 min at 350 degrees. Peggy K.
