I've used a recipe of Bryanna Clark Grognans from her Vegan Feast Newsletter which is fabulous, spicy like Veganaise, low fat & no soy-aftertaste like Nayonaise. Colleen :)

Thanks for the review. That's the one I want to try . . . as soon as I

find a source for agar.

Hi Sparrow,

 

I guess this must be the one Colleen is talking about... <blush> I

haven't tried it, but it sounds great! I've never purchased agar, so

I'll have to check if our local stores have it available. If they do,

I'd be happy to mail you some! :)

No the one I used was in her subscription newsletter (which is well work the money in my opinion). It was low fat and didn't call for agar (which is good cause all I can ever find is sweetened agar which is pointless for anything I want it for.

Ah. Well, unless she has archives available to rs, it sounds

like a recipe that's not available to me. Darn.

Bryanna's New Lowfat Eggless Mayonnaise

Amount Measure Ingredient -- Preparation Method

3/4 cup cold water

3 tablespoons cornstarch -- wheat starch or

4 1/2 tablespoons white rice flour

1 cup any non-dairy milk (can be low-fat)

2 tablespoons apple cider or white wine vinegar -- or lemon juice

1 1/2 teaspoons salt

1/2 tablespoon nutritional yeast flakes -- optional

3/4 teaspoon dry mustard -- or some lemon pepper to taste

1 pinch white pepper

2 tablespoons extra-virgin olive oil -- no substitutes

 

In a small saucepan or microwave-proof bowl, mix together the water and the

cornstarch and stir contantly over high heat until thick and translucent-- not

white.

 

MICROWAVE OPTION: Add the cornstarch to the soaked agar and water in the bowl

and microwave on HIGH 30 seconds. Whisk. Repeat four times, or until thick and

translucent-- not white.

 

Place the cornstarch mixture and all other ingredients EXCEPT the oil in a

blender or food processor. Blend well, then add the oil slowly through the top

while the machine is running. Blend until the mixture is very white and frothy

and emulsified (you can't see any oil globules). (NOTE: This mayo doesn’t get

thick as you blend it, like regular mayonnaise, so don’t blend it and blend it,

thinking it will thicken—it won’t!! It will thicken in a few hours in the

refrigerator.) Pour into a clean jar, cover and refrigerate.

 

Keeps several weeks.

 

NOTE: this makes a good base for cold savory sauces.

 

**ON CORNSTARCH: Call me old-fashioned, but I really feel that cornstarch is the

most reliable and easy-to-work-with starch. I’ve tried arrowroot, but it is just

not as consistently reliable as cornstarch. To avoid GMO’s, you can use organic

cornstarch. Here’s where to get it if your HFS does not carry it;

Serving Ideas : This mayonnaise (and variations) can be used as a savory

vegetable and toast topping.

 

NOTES : For those who are allergic to soy, do not like tofu mayonnaise, or the

commercial " light " mayos (most are not vegan, anyway), here is a delicious

solution! It contains a small amount of oil, just enough for good flavor, and

has only about 10 calories per T. (compared to 100 calories for regular mayo!).

It’s smooth and creamy, and a little tangy, but not too much.

No, I'm not a big fan of low-fat mayonnaise. I have tried and liked the

following recipe very much. The ground flaxseed will give you a slightly

speckled product, but if you don't mind that, this is, imo, very good. You can

Ah. I need low-fat because I'm trying to lose some weight and regular

fat mayonnaise gets my fat and calorie intake too high if I eat it.

 

I guess that puts the kibosh on me asking whether the recipe does or

doesn't use agar. There was no agar in the list of ingredients, but

the directions talked about what to do with the soaked agar.

Oh, I like flaxseed, so that's not an issue. My issue would be that,

if the one commenter is correct, it's got over three times the

calories as regular mayonnaise! Yikes!!
