I hear you can use grated ginger and marinate the tofu overnight - apparently very nice! Bought some more - 'clear' tofu - it is so versatile and I love the taste, sometimes even eating it on its own (heh heh!) I'm all tofu-ed up now.... Her Spinach, Mushroom and Tofu Lasagne is rather scummy and her Braised Tofu is much much MUCH nicer than the tinned stuff that looks like cheap'n'nasty dog food. I've not tried her tofu desserts yet... But I intend to! Another good recipe is Rose Elliot's Roasted Tofu and Satay Sauce from her book, " Vegan Feasts " - also a reliable book. (By " reliable " , I mean I've found that I can trust the recipes to work properly first time.) Of course, in the real world, who follows recipe books every night of the week??? I often use my char-grill pan to cook 1.5 cm thick slabs of tofu - oil the tofu first. This gives the tofu (and all my other veggies) stripes and so they look rather cool'n'funky'n'posh. (i guess this is only relevant to wee siofra and myself?)... i just managed to finish translating the first tofu recipe from " Tofu - 100 Recipes " from the japanese... Arare Tofu - " Tofu Hailstones " ... small deep fried balls of tofu ... they look like wonderful party snacks... !! I'll publish it on a web page with a photo of the bamboo sieve that is used ... (you can find pictures of one by searching for " zaru " in Google's Images search page....) ... then give the link to it when done... Guest guest Posted January 21, 2003 Report Share Posted January 21, 2003 nigari is magnesium chloride ... it's a coagulant ... you often see that because it's got an exotic name ... MgCl2 or is it MgCl3? doesn't have that exotic appeal... the other common coagulant you'll find is gypsum - natural calcium sulfate ... both have been used traditionally in Japan ... (altho 'Traditional' can often mean only a hundred years or so) you can get different grades of gypsum and nigari - from 'food-' to 'industrial-' gypsum is often preferred as it contains calcium ... nigaru is preferred for better tasting tofu ... clear spot is firm (cotton) tofu ... i find it has a funny taste to it ... but that might have been an odd batch...
