Cotton Tofu (momen-tofu) is made by pouring soy milk + coagulant into a container that is covered with a cotton cloth... as it solidifies a weight is put on top so excess water seeps through the rough cotton cloth... Silk (silken) Tofu (kinu-tofu or kinugoshi-tofu) is made by pouring soy milk + coagulant into a container ... no cloth is used... the liquid (containing soy whey) blends into the coagulating milk... the texture is like silk... (just so anyone thought it might not be vegan because silk was used...) in my experience cotton tofu is firm tofu .. easy to pick up chunks in your fingers... silken tofu tends to squish between your fingers a lot easier...
